Dinner With Rocky
Among so many things that Rocky loved, food was top of the list. He taught his daughters that food has the power to transport you to faraway places, expose you to other cultures, and help you to relive old memories. For Rocky food was more than a necessity, it was a comfort. To him every new restaurant was an opportunity for discovery. He took great pleasure in cooking for himself and others, almost as much as he enjoyed other people’s cooking. And sharing a meal was his absolute favorite way to show his love and commune with friends and family.
Below are recipes for just a few of his favorite foods. Whenever you feel like having Rocky over for dinner, just whip up something from the list below and his spirit will be with you in no time.
*note: Rocky rarely followed recipes. He saw them more as a jumping off place. So for the full Rocky Wilhelm experience, we encourage you to experiment and see what happens!
New Mexico Style Hatch Chile Rellenos
Cheesy Corn Casserole with Green Chile
Fried Salmon (or Tuna) Patties
*Each Christmas Rocky's family used the leftover ham to make a large batch of pinto beans. When sick of the beans, they would refry them and roll them into burritos. Rocky never used a recipe to make the beans but they came out perfect every time.
Don’t forget the sweets!
*Rocky would have NEVER attempted to make these himself, but he loved the ones his mother-in-law would make
Cranberry and Chocolate Chip Cookies with Oats
*Another recipe Rocky didn't make himself, but he couldn’t get enough of Mary’s each holiday season
